"Of all the great things that the English have invented and made part of the credit of the national character, the most perfect, the most characteristic, the only one they have mastered completely in all its details so that it becomes a compendious illustration of their social genius and their manners, is the well-appointed, well-administered, well-filled country house."

Here is a recipe I found on the web. My mother has our recipe and she's not home. This one is very close to the one we use, although we add red peppers and an onion. Apparently the one we used (which was from Barb, the knitter that got me the little knitting decoration, remember her?)is about 50 or so years old. Love it.
Happy Slippery Jacking!
Slippery Jack Pickles
8 large, very ripe cucumbers
1/2 cup salt
1 1/2 cups sugar
2 T. mustard seed
1 T. celery seed
1 T. Mixed whole spices
3 1/2 cups cider vinegar
Peel and slice cucumbers lengthwise into 4 or 5 inch lengths. Remove seeds.
Sprinkle with salt and let stand 24 hours. Place salted cucumbers in colander, drain one hour. In large cooking pot boil sugar, spices and vinegar 5 minutes. Add cukes and simmer 20-25 minutes. Pack into hot jars and seal at once.
